Naked Greens & Feta Pie

A light and flavourful meal that's perfect for any time of day. Made with fresh, leafy greens and topped with tangy feta cheese, this pie is both delicious and nutritious.

Ingredients

  • 5 cups mixed chopped greens I use kale, silverbeet & sorrell
  • 1 leek sliced
  • 1 small onion sliced
  • 1 clove garlic sliced
  • 4 large eggs
  • 25g grated cheese
  • 90g low fat feta crumbled
  • 1/4 cup mint leaves chopped
  • 1/2 lemon, zest
  • 1 tsp olive oil

Instructions

  • Gently sauté onions and leek with oil for three minutes
  • Add greens and cook for a few more minutes
  • Place a lid on the pan for a minute so it cooks nicely, then let cool so the eggs don't scramble when they are added
  • Mix eggs, feta, parmesan, mint and lemon zest, then add onion and greens
  • Line a pan dish with non-stick baking paper and add mixture
  • Bake in the over until the eggs are cooked (about 30 mins)
