Cauliflower and Sweet Potato Pizzas
A great way to satisfy your pizza cravings without all the carbs and calories. Plus, the crust is made from cauliflower, making it a gluten-free and lower-carb option that's perfect for anyone with dietary restrictions

Ingredients
- 1/4 head of cauliflower
- 1 small sweet potato
- 1/2 red onion
- 1 tbsp fennel seeds
- 1/4 cup grated parmasan cheese
- 1/2 cup low fat ricotta
- 4 small wholemeal pita pockets (15cm wide)
- 1 clove garlic
- olive oil spray
- handful of rocket leaves to serve
- lemon wedges to serve
Instructions
- Thinly slice sweet potato and spray lightly with olive oil
- Sprinkle with half the fennel seeds and place on a baking tray lined with non-stick paper
- Bake at 180 degrees for 30 minutes
- Cut the cauliflower and place on another baking tray, spray lightly with olive oil
- Sprinkle with half the fennel seeds and place on a baking tray lined with non-stick paper
- Bake at 180 degrees for 25 minutes
- Place pita pockets under a hot grill for one minute, or until crisp
- Remove and rub with garlic
- Turn over and spread the ricotta on the base
- Top with the roasted veggies and onion slices
- Sprinkle parmesan on top
- Place pizzas under the grill until parmesan cheese has melted
- Serve with rocket leaves and a lemon wedge
