Buckwheat Pancakes w Banana & Blueberries

Made with buckwheat flour, these pancakes are a gluten-free and high-fibre alternative to traditional pancakes. The addition of banana and blueberries adds natural sweetness and a boost of antioxidants.

Equipment

  • whisk
  • mixing bowl

Ingredients

  • 1 banana, mashed
  • 1/3 cup milk any kind
  • 1 tbsp maple syrup
  • 1/2 cup buckwheat flour
  • 1 tsp baking powder
  • 1 pinch salt
  • 1 egg
  • 1/3 cup reduced fat yoghurt
  • 1/2 cup blueberries
  • coconut oil spray

Instructions

  • Whisk banana, milk, maple syrup and egg together then add buckwheat, baking powder and salt until well combined.
  • Spray a non stick pan lightly with coconut oil spray
  • Cook on a low – medium heat until there's a good colour on underside and flip.
  • Mixture will make 4 small – medium pancakes.
  • Serve with blueberries and natural yoghurt
