Oat, amaranth & pepita bar

Ingredients

  • 1 small-med banana ripe or overripe
  • 4 dates pitted
  • 1 tbsp almond butter
  • 1 tbsp maple syrup
  • 1 tbsp coconut oil
  • 1 cup rolled oats
  • 1 cup puffed amaranth
  • 1/3 cup pepitas
  • 1 tsp orange zest lime or lemon will work too.
  • pinch cinnamon
  • pinch cardamon

Instructions

  • Preheat oven to 160 degrees
  • Add banana, dates, nut butter, coconut oil & maple syrup and blend until smooth
  • In a bowl mix remaining ingredients & add blended mixture to combine
  • Pour mixture onto a lined baking tray and flatten until level
  • Bake for 20-30 minutes or until golden brown
